The blueberry rye-pie “rättänä” workshop

In Okkola’s blueberry rye-pie (mustikkakukko or rättänä in finnish) workshop you´ll discover the old art of making tasty rättänäs! The hostess, Paula, will guide you through the knicks and knacks of baking these traditional delicacies in her own country home.

Small groups who are interested in Finnish traditional baking and countryside living. Suitable for all ages!

Allergies:

The workshop is suitable for lactose-free diets. Please notice that the workshop is not gluten-free as we need to use rye for the pies. Private groups can also be made vegan.

Welcome to my cozy home on the island of Niinisaari on Lake Saimaa!

In the workshop, we’ll bake traditional blueberry rye pies together, share stories and eat blueberry rye pies together at the end. The workshop takes place in my home, in the beautiful surroundings of a 1700s log cabin. We’ll start by making the basic dough together, forming the base, edges and lid from the dough. We put blueberries in the dough and bake the mustikkakukko.

After we are done with baking, we’ll drink tea/coffee and eat the blueberry pies with vanilla sauce or ice cream together. You’ll get the recipe and a new skill to take home with you!

Suitable for beginners and experienced bakers alike to hone their skills.

We use rye flour from the local, D.O. Saimaa-labelled Rapion Mylly (Rapio Mill) for baking. The blueberry pies can also be baked lactose-free if requested in advance.

How the workshop works:

  1. I will welcome you at my home next to our restaurant, Niinipuu. Depending on the weather, we can drink non-alcoholic appetizer drinks under a maple tree in our garden or inside. The mustikkakukko workshop is held in a 1700s log cabin in my home. Aprons are provided by the house. First we’ll make the base dough together, I’ll show you my way of filling the pies. I’ll instruct, advise, demonstrate. In the end we’ll drink tea/coffee and eat blueberry rye pies with vanilla sauce / ice cream together. You will get the recipe, a new talent and many memories with you!
  2. Who is it for? Families, groups of friends, bachelor parties, work parties, solo travellers. Please note that there are a few steps to enter my house. Children and babies welcome. Children under 4 years free of charge.
  3. Group size: Private 1-10 people, open 1-8 people.
  4. When can I book? All year round, please note that reservations must be made five days in advance. The workshop starts at 10.00 am unless otherwise agreed.
  5. Duration: approx. 1,5 – 2h h

In a nutshell

  • Experience the baking of the authentic Savoie traditional dish blueberry cake, rättänä, in an authentic environment. (rättänä is eligible for EU product protection as an Authentic Traditional Product).
